I have been SO motivated to blog over the past few days, but didn’t have anything blog worthy to share until tonight. My meals have been less than stellar because I haven’t been able to make it to the grocery store until tonight. It’s been really crappy here in Boston and when you have to walk to the grocery store and managed to lose your only umbrella in your move, it makes it hard to get motivated to grocery shop…. until you remember you moved 10 minutes from Heaven.
So tonight I made a quick stop at whole foods after my Zumba class. I just needed a few things..my body was CRAVING veggies. Here’s what I made out with
Green beans, corn, cucumbers, tomatoes, green pepper, apple, plum, fresh parmesan cheese and hummus (on sale for $1.50!). This is quite a bit of delicious food for only $13, right? I should write a post about this sometime, but I am the ultimate savvy shopper when it comes to whole foods. At Trader Joe’s or anywhere else I always go over budget, but while at whole foods, I stay on track!
For dinner, I made the best meal ever.
Seriously, could anything be more delicious?!
The bad news is my smoke detector is the devil, and went off for a good 15 minutes while I was making dinner. It also goes off when I shower. Apparently it’s a steam detector, not smoke.
Shrimp Scampi (Serves 1)
1 serving of the pasta of your choice, I used whole wheat linguine
1 serving frozen shrimp
1 TBS olive oil
1 TBS minced garlic
Sprinkle of fresh Parmesan cheese.
Start by cooking your pasta per the directions on the box. While the pasta is cooking, defrost your shrimp in some cold water. Coat a frying pan with your EVOO and garlic and begin to cook on low until the garlic is browned. Once the garlic is browned, add you shrimp and cook on medium for about 10 minutes or until it’s heated thoroughly. Add pasta to the shrimp, mix and a generous helping of Parmesan cheese.

For the salad I just used 1 pickling cucumber, 1 tomato, a few basil leaves, and a few squirts of balsamic and EVOO. It was delicious as always. I am anti lettuce these days, and think I am going to turn into a tomato because all I want to eat are tomatoes and basil.
I am currently coming up with an awesome weight loss, get fit plan for September, I can’t wait to share it. One thing I am working on is becoming a morning exerciser…starting tomorrow! So tell me this, when do you work out? Have you made the switch from PM to AM?
