Sometimes after a rough Monday, you just want something easy, healthy and delicious.
Salads will always be my favorite easy meal. I was going to cook, but I just wasn’t feeling it and I was desperate for a plate of veggies! Plus I love chopping veggies, am I the only one? It’s so fun!
This salad contained:
Spring Mix
1 tomato
1/2 a cucumber
Green peppers
Steamed green beans
mozzarella cheese
After I made the salad I decided to make a fun salad dressing. I used 2 TBS garlic lovers hummus, 1 tsp EVOO, 1 tsp balsamic vinegar, 1 TBS nutritional yeast and a small drizzle of lemon. This was soo good, but very thick! I mixed everything together and spread it all over the salad. Best salad I have had in a while!
I love salads because they are a good way to get in a ton of nutrients and vitamins. I usually add beans, egg whites or tempeh for protein if I am eating a salad for a meal, but tonight veggies were good enough for me.
What’s your favorite salad topping? Mine is croutons!
So today marked the first day of a my getting into shape plan. I woke up early and went for a nice 2.5 mile run. It felt awesome to get my workout done in the AM. However, my eating really wasn’t great. We had food brought in at work, and although it wasn’t unhealthy—salad, roasted veggies, pasta and rice, I just ate way too much :/ Then I had plans after work so I had a large snack thinking I wouldn’t be home until late, but then my plans fell through so I felt like it was a waste. Oh well, tomorrow is a new day! I am going back to spin, and I will be trying out a new gym I am planning on joining. My current gym is women only and I have never had a male spin instructor like I will tomorrow, so I am hoping all goes well!
