Protein Cravings

Lately I have been craving protein. Veggies and carbs are delicious, but every now and then I need a little bit more protein than I get on a daily basis. Usually two of my favorite protein sources are Greek yogurt or cottage cheese but I am trying to cut back a bit on dairy because it’s been upsetting my stomach.  I also like tofu, tempeh, beans, shrimp and every now and then I like the fake stuff.

Creamy “Sausage” Pasta (Serves 1)

1 serving whole wheat pasta

2 TBS hummus (I used garlic)

1 Morningstar farms soy sausage

Fresh basil, salt + pepper to taste

 

This was SO easy, and super delicious! All I did was cook the pasta, drain, cook the sausage in the microwave, and then add everything together. It took me maybe ten minutes to make and satisfied my creamy, protein, and carb cravings! I just needed some veggies. So after I took the picture I added a small cucumber, tomato, avocado salad. Perfect!

Over the past week I have discovered hummus can be used for everything! I really should start making my own again, but it’s been on sale at whole foods for only $1.50 for two weeks so I’m pretty stocked up on it now. Do you like hummus? What do you do with it?

In fitness news: On Saturday I ran 5 miles for the first time ever :) I didn’t stop once either! I was so proud of myself. I am also still going strong on my morning workouts! However, I hurt myself this morning at spin… I slipped off my bike a bit while climbing and fell back into my seat and also smashed my leg with one of the pedals. I am in a ton of pain! I have a weird condition with my tailbone where it’s misshaped and longer than other people’s so it’s CONSTANTLY causing me pain whether I am sitting, standing or laying down. It’s also gotten a lot worse since I lost weight, and unfortunately when I fell I really agitated it. I’ll probably skip my Thursday spin class and hopefully get some strength training in instead!
