Vegetable Lover

After Monday’s dinner, and Tuesday’s dinner below you may think I am on some sort of veggie detox. I am not. I went grocery shopping on Sunday and I went a bit out of control. I have been spending only $30/week for the past few weeks and on Sunday I spent $80, so you can only imagine the veggie overload that is my life right now. I don’t want to waste anything so I am enjoying all of the veggies that I can!

Tonight I came home from work and was going to go to the gym for some strength training, but decided to play in the kitchen instead. No worries, I started my day with a nice run, but I really need to get my strength training into gear. First, I roasted up some broccoli. I just tossed it with some EVOO and salt and roasted on 350 for about 40 minutes.

Earlier, I took a break from work to go for a walk, but ended up spending some time in CVS reading magazines. There was a quick shower and I figured what better way to spend the rain time then catching up on the one magazine I don’t subscribe to. I found this article on food pairings and then had red peppers and chickpeas stuck in my head all day. So I made an onion, red pepper, chickpea and kale dish!

Ingredients (serves 2)

1 red pepper

1/2 cup red onion

1 cup chickpeas

5 leaves of kale

1 tsp minced garlic

1 tsp EVOO

1 cup vegetable broth

First start by sautéing your onion and pepper in EVOO and minced garlic. Do this for about 10 minutes or until the veggies get soft. I also add a little bit of broth every few minutes to help the veggies cook. Then add your chickpeas and cook for 5 more minutes. Next add your kale, and add more veggie broth to help it cook down. This should only take about 5 more minutes. Add as much or as little broth as you’d like.. I just use it to give it a bit of flavor and help everything cook up instead of dousing it in EVOO.

This dinner was SO filling that I actually didn’t even finish it! I have mentioned that I am trying to lose more weight. My biggest obstacle is that I eat too much. Whether its chips or vegetables my portions are always too large. Too many vegetables are really not my problem, but I am trying to pay attention to when I am full and not keep eating just because I have food on my plate. I did a great job tonight and now I have even more for lunch!

So the other night I made spaghetti squash and a breadstick that kind of looks like poop or something else perverted.

I am sorry I had to acknowledge this before someone else did. It was delicious. But, the spaghetti squash was not. I bought it because it was really cheap at TJ’s. I mean a year ago I bought a spaghetti squash at Shaw’s and I’m pretty sure it was half the size and over $6 so I figured this $2 was worth it. I have tried on multiple occasions to enjoy the spaghetti squash. I love spaghetti and eat too many carbs, so I figured this would be a great substitution. Every time I eat it I want to throw up. I literally had to gag my leftovers down and eventually just threw them out. However, now I still have half of a monster squash in my fridge… any spaghetti squash recipes?? I have always just mixed it with veggies and sauce like I did above.
