The Ultimate Breakfast Sandwich

I can’t help it…I just LOVE eggs. I love hardboiled eggs, fried eggs, over easy eggs, scrambled eggs and egg whites. After two days of oatmeal pancakes, I had to go back to my roots.

Breakfast sandwiches are the best way to start the day. This bad boy has 2 egg whites, mashed avocado, tomato slices, green pepper slices and some spicy mustard. The ultimate breakfast sandwich in my mind.

Good Afternoon! I love having days off during the week. I love week day talk shows, sleeping in and making delicious breakfasts. My go to breakfast for any day off is usually eggs in the form of omelets, egg sandwiches or on top of sweet potatoes. Today I had eggs, but no cheese or vegetables to add a little flavor to them so I decided on something else. I was going to make oatmeal but I didn’t have banana and oatmeal without bananas doesn’t happen in my world. I decided on an Oatmeal Pancake. I never make pancakes, in fact I am pretty sure this is the first time I have ever made them. I just don’t really like them, but I had read in a magazine about oatmeal pancakes and how they are a healthy way to start the day so I decided to try it out.

I couldn’t remember which magazine it was… I have about 30 in my apartment right now, so I headed straight to google and ran into my usual problem, no recipes for just ONE pancake! Finally I remembered seeing this on Katheats before so I headed over there for a very easy recipe for one serving. The changes I made were I used 1/2 cup oats, 2 egg whites (about a half cup) and pumpkin pie spice instead of cinnamon. I also added 1/4 cup of peanut flour mixed with water and sea salt on top.

Oatmeal (1/2 cup uncooked) 4 points+

Egg whites 1 points+

Apple 0 points+

Peanut flour 1 points+

I attended my first meeting yesterday. I officially joined on Tuesday, but didn’t have time to make it to a meeting until yesterday. The good news is I am only 3 pounds more than my lowest weight in May, and I have only 24 pounds to go before goal.  I know I can reach this and keep it off in 2011. I made a huge list of things I want to accomplish in 2011 and I am feeling very motivated and excited.

Tonight I am heading to a friends house, and of course bringing “my” dip. What are you up to? I wish you all a very happy 2011!!!

Weekend Breakfasts

Coming up with 3 meals and multiple snacks a day for 7 days a week is a lot of work. I like to make my own food because I really enjoy cooking and chopping, I know it’s healthier and it saves me money. Even though it’s a lot of work, I do enjoy doing it. Sure, it can stress me out sometimes when I am sick of everything I have, but it’s worth it. One way that I make my life easier is that I eat the same breakfast during the week and I eat something that can be made quickly at work. Whether it’s a yogurt week, a bagel thin and fruit week, or an oatmeal week, I always have whatever I need at work to make my meal and I never have to worry about it- It’s great!

This means that on weekends I like to get a little creative! I love going out for brunch or just making my own brunch meal that always includes eggs and usually includes home fries. I make awesome home fries!

On Saturday I made sweet potato home fries, with one over easy egg and a Morningstar farms sausage patty. I have been craving fake meat for some reason. I used to hate over easy eggs. I’m big on everything I eat that could possibly give me salmonella or something has to be cooked to a crisp. However this summer I started going to a local place for breakfast near my parents came that had a very limited menu. Well, limited in my opinion, but they had one dish I loved! It was eggs Benedict (I got mine without hollandaise because I don’t really like most sauces) that was served on English muffins that were covered in spinach and tomatoes, with home fries of course. It was delicious, but the eggs were over easy and I didn’t know that until I got the dish, and fell in love with the runny yolks! They taste so good over home fries!

Today I had to switch it up a bit. I made sweet potato home fries again, had one piece of Morningstar farms bacon, and had two egg whites with spinach. Delicious breakfast in bed on Sunday morning :)

Ashleigh’s Home Fries (serves 1)

You can make these with sweet potatoes or regular ones.

Ingredients

1 potato of choice- since I am usually making these for only one I try and get smaller potatoes, you could always use half.

1 TSP EVOO

paprika, garlic salt, salt + pepper to taste

optional: green peppers and onions

Directions:

First start by peeling you sweet potato, then stab it with a fork a few times and put it in the microwave for 2 minutes. If I have green peppers and onions on hand, then I always add them to my home fries. I personally think you need onions, and the peppers are just an additional deliciousness. Anyway, while your potato is cooking, chop up the veggies if you are using them. Once the potato is done, chop that up as well and add to a Tupperware container. Next add your veggies, EVOO and all of the spices to taste then cover you Tupperware and shake it! Then throw these into your frying pan and cook on high for about 7 minutes..maybe a bit longer if you like them burnt like I do. you could also add some more EVOO or cooking spray here, but I do just fine without them. Make sure to keep an eye on them!
