Delicious Dip!

I don’t know about you, but every time I go to a get together, there’s always someone who brings something that they are well known for. Whether it by their famous cup cakes, their famous brownies or their famous cheese platter, they always come prepared and everyone is counting on them for it. I’ve never been like this. When it comes to office stuff, I always bring something in, but I wait until the last minute and end up grabbing chips and salsa or something along the lines of that. That is, until recently, when I discovered a delicious dip which is now my go to for any party or get together I attend.

Cream Cheese and Veggie Dip

One package of cream cheese

1 TBS minced garlic (or more)

2 celery stalks

1/2 of a small tomato

1/2 of a red pepper

1/2 of  a green pepper

1/2 of a pickling cucumber

1/2 of a small red onion

1/4 cup Italian or balsamic salad dressing

Optional: olives

 

Let your cream cheese sit out for a bit to soften up. Chop up all of your vegetables and marinate them in the dressing. Once the cream cheese is softened a bit mix it together with the garlic. Spread the cream cheese out on a serving plate and then cover it with your vegetable mixture. Serve with crackers and enjoy.

Sometimes I make a double batch, and literally all you do is double everything. Instead of half a cucumber, use the whole thin and so on.

This is so good and easy! You have to make it for your next event!

Spinach and Artichoke Dip

Happy Biggest Loser Tuesday!! Do you watch? Love it! It’s so motivating and inspiring.

The other day I was browsing food blogs as usual and came across Balanced Foodie’s post for a healthy spinach artichoke dip. Tonight I had company for dinner and wanted to make a delicious, but healthy appetizer and that popped into my head.

Um, this was AMAZING!!

Head over to her blog for the exact recipe but, basically I used 3/4 of a container of spinach and artichoke hummus, 1 cup of fresh spinach, a heavy helping of minced garlic and an even heavier helping of fresh parmesan cheese.  I’m not certain of the exact amount of calories in the dip, but it’s probably close to 500 for the whole thing, and has multiple servings. Mine would have been even lower if I didn’t use so much cheese. Most restaurant versions have over 1000 calories and loads of fat. I looked up Chili’s info and their dip has 1130 calories and 90 grams of fat! I’m not sure I could even order it out after tasting this deliciousness!

Do you like dip? What’s your favorite kind? I could make a meal out of dip! In fact, I pretty much did tonight! Although spinach artichoke dip is my favorite, I also like taco dip, veggie dip, and pizza dip. I love dip <3
