I don’t know about you, but every time I go to a get together, there’s always someone who brings something that they are well known for. Whether it by their famous cup cakes, their famous brownies or their famous cheese platter, they always come prepared and everyone is counting on them for it. I’ve never been like this. When it comes to office stuff, I always bring something in, but I wait until the last minute and end up grabbing chips and salsa or something along the lines of that. That is, until recently, when I discovered a delicious dip which is now my go to for any party or get together I attend.
Cream Cheese and Veggie Dip
One package of cream cheese
1 TBS minced garlic (or more)
2 celery stalks
1/2 of a small tomato
1/2 of a red pepper
1/2 of a green pepper
1/2 of a pickling cucumber
1/2 of a small red onion
1/4 cup Italian or balsamic salad dressing
Optional: olives
Let your cream cheese sit out for a bit to soften up. Chop up all of your vegetables and marinate them in the dressing. Once the cream cheese is softened a bit mix it together with the garlic. Spread the cream cheese out on a serving plate and then cover it with your vegetable mixture. Serve with crackers and enjoy.
Sometimes I make a double batch, and literally all you do is double everything. Instead of half a cucumber, use the whole thin and so on.
This is so good and easy! You have to make it for your next event!
