Chopped Quinoa Salad

Quinoa is pretty much my new favorite food. I don’t know why I waited so long to try it. You see, my idea of an awesome meal is lots of veggies and some carbs. I love salad + bread, veggies + pasta, veggie pizza, but I really eat too many carbs and not enough protein. Enter quinoa! It’s just perfect; low in calories, high in fiber and high in protein! Plus it gives me a break from the pasta dishes I would create daily.

The other day, I made the best quinoa salad to date.

Chopped Quinoa Salad (Serves 1)

Ingredients:

1/4 cup uncooked quinoa

1/2 of a cucumber

1 small tomato

a small handful of fresh basil

1/4 cup green pepper

1 cup green beans

1 tsp EVOO

dash of fresh lemon juice

parmesan cheese

salt + pepper to taste

First start by rinsing then cooking you quinoa. While the quinoa is cooking, chop all of your vegetables into tiny pieces. Once the quinoa is cooked add it and all of the veggies into a mixing bowl. Add chopped basil, 1 tsp EVOO, dash of fresh lemon juice, salt and pepper to taste. Refrigerate for at least 20 minutes. Once it’s cold enough, plate and add parmesan cheese on top.

Soo.. what’s everyone doing for Labor Day Weekend? I am heading to Maine and couldn’t be more excited. I need a break from work so badly. I really hoping the sun comes out!

    I have never had quinoa and I went to Whole Foods and bought some to make this week. I had no idea how to prepare it..so thank you sooo much for this post! I am definitely going to try your recipe!

    Have a great trip and fun Labor day weekend!! I plan on watching college football all weekend and going to the Gator game on Saturday!

    Hooray for Quinoa!! It’s my new favorite. This recipe is great and a nice way to use up veggies. I bet it would even be good to take for lunch.
